Nouvelle Kinilaw Marinade

Nouvelle Kinilaw Marinade by Chef Rina Estero

 

Ingredients

  • Yield 1/2 cup
  • 1 oz peeled ginger
  • 1 thai chili pepper top removed (reserve one half)
  • 2 tsp soy sauce
  • Juice of 1/8 lime
  • 1.75 oz coconut milk
  • 1 green onion thinly sliced
  • 1/2 lb Sushi Grade Ahi Tuna
  • 2 oz White Onion

Directions

  • Cut ginger into 2-3 slices place in food processor with 1/2 thai chili and lime until chopped.
  • Add soy sauce and coconut milk and blend until well incorporated, set aside.
  • Thinly slice remaining half thai chili and add with the green onions to marinade and mix well. Add ¼ cup marinade and 1 oz of thinly sliced white onion to 4 oz of fresh Ahi grade Tuna in a bowl and mix well.
  • Place atop asian slaw and garnish with microgreens. Serve immediately.
